INGREDIENTS

4 eggs
2 cups potato straws (sali)
1 onion finely chopped
3 tbsp. finely chopped corriander
1 green chilli finely chopped
1/2 tsp freshly ground pepper
Salt to taste
Oil

METHOD
  1. Lightly fry the onions in oil, till light pink, do not brown the onions.
  2. Add the potato straws along with the chillies and corriander and add 2 tbsp of water and cover and cook for 2 mins.
  3. Once the potatoes have softened, spread flat in the pan.
  4. Break the eggs carefully over the potato straws, sprinkle with salt and pepper, cover and cook till the eggs are done.
